This Chicken Masala recipe uses sweet Masala wine and heavy cream for a velvet, juicy sauce that is a traditional twist. This is an elegant dish that can be served with risotto with parmesan or a side dish of linguine.

  • 8 ounces of fresh cremini buttons or mushrooms, stems removed and sliced
  • 2 tablespoons of olive oil, divided
  • 2 skinless chicken breasts, skinless
  • Salt and pepper to taste
  • 1/2 cup plus 1 splash of Masala sweet wine, divided
  • 3 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken stock
  • 2 tablespoons unsalted butter

All Required Directions/Method Of Cooking Process Step by Step:

  1. Fry the mushrooms in a large pan in 1 tablespoon of olive oil until light caramelization. Remove the mushrooms from the heat and set aside in a small bowl.
  2. Thoroughly slice each chicken breast lengthwise to obtain four thinner pieces of chicken. Lightly salt and pepper the chicken breasts.
  3. Heat the remaining olive oil in the same pan and brown chicken breasts on each side until almost ready (they will continue to cook in the sauce in step 6). Remove from pan and keep warm.
  4. Preheat a pan with 1/2 cup of Marsala wine. Add the garlic. Continue cooking until the wine becomes thick and thick.
  5. Add cream and reduce slightly. Add the broth and continue to reduce slightly until the sauce covers the back of the spoon.
  6. Squeeze chicken breasts in a pan, add mushrooms and a spoonful of sauce on top. Simmer until chicken is cooked, about 5 minutes.
  7. Transfer the chicken to a dish and keep warm.
  8. Beat the butter in the sauce left in the pan, season to taste with salt and pepper, and allow to slightly reduce. Add a splash of Marsala wine to the sauce and pour the chicken. Serve immediately with a linguine or risotto, if you like.
